1. Linking up for my Friday 7. In the past week I have found myself thinking up all of these new home design ideas. It could be credited to just receiving Better Homes and Garden in the mail or perhaps it’s the fresh spring air that is driving these desires. If anything comes to fruition I will make sure to share it with you.
2. It is incredible how well the boys have adapted and taking a liking to American food, with pizza and spaghetti topping their list. It seems there is hardly anything they do not like. Well perhaps a couple, like raisins and visible onions. Still I wanted give the boys a taste of Ghana. So I attempted one of their favorite Ghanaian recipes, fufu. I didn’t have the ingredients or tools to make it the traditional way, but thanks to pinterest I found a few substitutes. It may have not been perfect and the consistency was slightly off, but they LOVED it!!!
3. I describe fufu somewhat like a dumpling, but a bit more doughy. It is considered finger food, you pinch off some and then scoop up your soup with it. I paired it with a recipe I found called West African Chicken Stew and found it all very filling. The boys also enjoyed teaching us how to eat it!!
4. You know your family screams Catholic when your 4 year old is singing Alleluia (loudly) at the park and your before dinner jam session is to Jesus Christ is Risen Today!
5. I never thought I would be one of those homeschooling moms, but we are deciding to homeschool for Kindergarten as the boys will only have been home 9 months. Plus, I love the fact that I can give them the extra attention to make sure they are caught up academically before sending them into a big classroom. So for all of you veterans out there I would love suggestions of curriculum and programs you used, liked or loved. Everyone says Kindergarten is easy, but for this newbie I still find it a bit daunting!
6. I am beginning to wonder what my house cleaning, dishes and laundry will amount to this summer. I am finding not much gets done on the nice days, even when it’s only 60 because we are spending so much time outside.
7. I read this quote the other day from St. Gianna Molla and had to write it down for the hard days of parenthood. It sums up so well the heart of being a mother and a beautiful reminder of the tremendous love and service we are called to.
Love and sacrifice are closely linked, like the sun and the light. We cannot love without suffering and we cannot suffer without love.
All I know is your hubby better come through with Mother’s Day this year!

I always get inspired by magazines like BHG, and pinterest! Of course, my mental image and my house don’t *quite* match up . . . 😉
The food looks pretty good!
K really isn’t too hard. If you’re nervous about it look into some of the all in one places. (Seton, Kolbe, Mother of Divine Grace, etc.) They will help guide you through it.
Haha, mine either I always have this great picture in my mind and I usually fall short! I am pretty sure I will do a program that has all lesson plans/curriculum planned out for me, plus it will help me stay on task as well.
