1. Joining Jen for a few takes, stretching it to make 7! Saying goodbye to 78 degrees and 20 mile bike rides last weekend and hello to 48.
2. Sometimes you need a little adrenaline rush and to feel like a kid again! Plus, I like an excuse to scream at the top of my lungs with no one questioning my sanity. Although, my husband may have been embarrassed that the adult sitting next to him was screaming as much, if not more than the 8 year old behind him!
3. The final countdown until my little brother gets married!!! Getting all sentimental on you, can’t believe it’s almost here! Since, I always acted like his mother-hen growing up I will be cliche and say it seems like yesterday. Really it does, seems like only a month ago he was calling me to discuss rings. In his own words, he said it’s going to be a waterfall fest. So us ladies have prepared with our waterproof mascara and I will be placing boxes of tissues strategically in the pews. Tears of joy of course!
4. I am realizing this month it’s a blessing we don’t have cable, otherwise I would be formally joining the league of Widowers to MLB Playoffs! (Grateful for the small things!)
5. Speaking of being grateful, a colleague surprised me with a delicious box of Trader Joe’s pumpkin bread mix, yummo! It made my day, a definite fall favorite! I was going to save it for a special occasion, but as soon as my husband saw the box he asked me to make it that night. No shame in a box mix that taste that good!
6. Pumpkin…if you have a favorite recipe that involves this ingredient please share. I took to Pinterest and had to refrain myself from pinning an obnoxious amount.
7. I have decided Fantasy Football may be have been the worse use of my $10, (of course my husband begs to differ) but I am close to being in last place. Fair-weather fan that I am, I threw in the towel after my second loss. The only game I care about is this week, because I am facing my husband. All bets on!

Heh, I found qt#4 amusing. My husband and I are BOTH way into the MLB playoffs and we’d be slightly losing our minds if we couldn’t watch our O’s!
Good to know that the TJ’s pumpkin bread in a box is yummy. It’s like when I discovered that the Betty Crocker cookie mixes are delicious and way simple!

Hope your fantasy football team comes out ahead this week. Ive made pumpkin butter the last few years, like apple butter, but better. Yummt on english muffins and pretty much everything!!! 🙂

I just had to leave you this recipe. It is from a friend’s mom, and it is amazing. I know TJs does a good job with box mixes, but I make this with my own pumpkin puree and it is amazing. I like to add chocolate chips. And my poor husband is losing me to my baseball listening this October through the MLB app. Go Cards! 🙂

Pumpkin Bread
3C sugar
1C salad oil
4 eggs, beaten
1- 16oz can pumpkin (or 15oz)
3 1/2 C SIFTED flour (if you don’t sift, the bread will be too heavy)
2 tsp baking soda
2 tsp salt
1 tsp baking powder
1 tsp nutmeg
1 tsp allspice
1 tsp cinnamon
1/2 tsp ground cloves
2/3C water
Add bag of walnuts if you want (I don’t)
Butter 2 9×5″ bread pans. Then line with buttered parchment paper and flour the pans.
Cream sugar and oil. Add eggs and pumpkin. Mix well. Sift together flour, baking soda, salt, baking powder, nutmeg, allspice, cinnamon, and cloves. Add to pumpkin mixture alternately with water. Mix well afer each addition. Pour into pans.
Bake at 350oF for 1-1 1/4 hours until loaves test done with a toothpick. Let stand in pans on racks for 10 minutes. Remove from pans to cool on wire racks.
Enjoy!! (It’s really good fresh from the oven, once cooled enough for handling.)

Here is the pumpkin butter recipe. I usually use water instead of apple juice. It keeps in the fridge for a long time and is so yummy. I dip pretzels in it too. 🙂

Ann, my sources tell me you are 8th out of 12 in your league and the season is still young! Plus, you should be moving up in rank after the brutal defeat of your husband this weekend. It was brutal because you beat him by .53 points!
